Are you vegan? Do you love key lime pie? Then this is the post for you!
Yeah, you heard that right, we figured out a way to replicate that recipe you love without any processed foods or dairy products. Did we mention it’s delicious?
With summer coming into full swing, we’re always looking for a crisp and refreshing treat to cool off with. Enter our version of the Raw Avocado Key Lime Pie. Creamy, tangy, and healthy! This pie will knock the socks off of even the pickiest of eaters.
Alright, with no further delay, let’s get into the recipe.
CRUST INGREDIENTS:
2 cups mixed nuts (we used an equal amount of walnuts and almonds)
1 cup raisins
9 large dates
FILLING INGREDIENTS:
5 large, ripe avocados
juice from 4 limes
1/2 cup organic maple syrup

DIRECTIONS:
CRUST:
Grind all the nuts in a food processor until coarse. Add raisins and dates; pulse until well combined. Make sure you do not overprocess. The crust needs to have this “lumpy” texture. Place the mixture into a round cake tin lined with parchment paper. Put into the refrigerator for about 1 hour.

FILLING:
Place all the filling ingredients into a food processor and blend until you reach a very smooth consistency (no avocado lumps allowed). Pour the mixture over the cold crust and spread evenly. Place in the freezer for about 1 hour.
Look at that creamy texture! That’s exactly the consistency we’re looking for.

Next, you can decorate and eat our pie!
That’s it! Pull your cake out of the freezer, and allow at least 1 hour for it to thaw before cutting and serving.
