There are many recipes online for raw chocolate almond truffles. The best chocolate truffles are always the ones that are made with fresh ingredients and have a lighter feel on your stomach. This is just one of many variations that you can also adjust to your own taste. Hope you like it!
INGREDIENTS:
1 cup raw organic almonds
3 cups water
1/4 cup coconut oil
2 Tbs honey or Agave nectar
2 Tbs cacao or carob powder
2 tsp vanilla extract
1 Tbs Brazil nut butter
1 Tbs green powder of your choice
pinch of salt
1 cup shredded coconut
DIRECTIONS:
Blend almonds with water in a high-speed blender, then strain through a nut milk bag. Melt coconut oil on the stove. Mix the almond pulp with the melted coconut oil and add all other ingredients. Once thoroughly mixed, take a tablespoon of the mixture and roll it into balls. Then, toss the balls in shredded coconut until completely covered. Place the truffles in an airtight container and put them into the freezer for about 30 minutes. After the truffles harden you can store them in the fridge. This recipe renders 11 delicious truffles and a quart of almond milk.
