We love cabbage at Project Wellness Now, so here is another great recipe! This green cabbage salad is very simple but do not let it mislead you. It’s really delicious and full of vitamins and minerals. Did you know that green cabbage is an excellent source of vitamin K, vitamin C, and vitamin B6? It also contains a good amount of manganese, dietary fiber, potassium, vitamin B1, folate, and copper.
INGREDIENTS:
1 small green cabbage
1 medium size orange bell pepper
1 medium size red bell pepper
1 small red onion
1 medium size tomato
1 medium size cucumber
lemon juice from 1/2 lemon
olive oil
salt and black pepper
DIRECTIONS:
Shred your cabbage very thinly. Add 1/2 tsp of sea salt and massage it really well. Put it aside for approximately 20 minutes. Chop your tomato and cucumber, slice bell pepper and red onion. Chop the parsley. By now, your cabbage should be soft and juicy. Mix it with all other veggies. Sprinkle it with some olive oil and lemon juice. Add salt and black pepper to taste. Refrigerate for about 20-30 minutes before serving.
